Mexico restaurant in Massaponax reviewed Date published: 6/25/2009

FOR THE FREE LANCE-STAR Just when we thought we had seen it all on Mexican restaurant menus, we tried the reader-recommended Mexico Restaurant in Cosner's Corner. This newest location for a small chain located primarily in the Richmond area devotes almost a half page to seafood--and, has a new twist to old favorites, such as a spinach burrito. The visit starts with warm chips and tangy salsa, a zippy flavor often lacking in other Mexican restaurants. Among the appetizers are quesadillas, dips and nachos, but I decided on the spinach burrito (one for $3.95). It was light, and not gooped with cheese and sauce. I added some of the salsa for extra pizzazz. My Dining Partner ordered coctel de Cameron ($11.49) for a starter. It's a favorite and prepared differently at each Mexican eatery. This was one of the best. It was served warm, stuffed with fresh shrimp, avocado, cilantro, lime, hot (not too) peppers in a tomato juice base. Excellent. We both were drawn to the descriptions of seafood entrees. Tempting dishes included combinations of scallops and shrimp that we have enjoyed in our travels to places that bear their names. MDP ordered camerones a Diabla ($12.49), hoping that the shrimp would be devilishly hot (so many dishes billed as spicy are disappointing). This was hot, hot, hot! But he didn't complain even when his eyes watered. The bountiful portion came with rice and a small salad. And he ordered a side of guacamole ($2.95). I selected chicken Yucatan ($11.49), a huge portion of grilled marinated chicken chunks in a mix of slices of squash and peppers over yellow rice. It, too, was served with a side of shredded lettuce, sour cream and guacamole. I was impressed with the tenderness of the chicken and the fact that it was not dry. With take-home boxes at the ready for a large part of the entrees, we ordered dessert and visited with our very gracious server, Bill, about where he has lived in Mexico. The dessert menu was typical: fried ice cream, sopapillas, flan, churros and chimichanga. I ordered the creamy flan ($3.79), thick, custardy and topped with syrup. It had a nice crust. MDP ordered apple chimichanga ($4.29). This confection is an apple-stuffed flour tortilla, which has been fried and dusted with cinnamon and sugar. Add to it a drizzle of caramel sauce and vanilla ice cream. Our empty plates were testimony to the desserts' excellence. Mexican restaurants are everywhere, and many are good. They use the prefab hard taco shells instead of actually cooking tortillas to be crispy-disappointing.
