Sauteed Green Beans with Shallots |

If you're entertaining, boil the beans a few hours ahead of time and stash them in the fridge. |
| Ingredients: |
- 5 cups fresh green beans, ends trimmed
- 2 tablespoons olive oil
- 2 shallots, thinly sliced
- salt and pepper, to taste

| Procedure: |
Boil green beans in a large pot of salted water for about four minutes, or until tender, but still crisp.
Drain beans and rinse in cold water to stop them from cooking more.
Pat dry with paper towels.
In a wide skillet, heat oil over medium-high heat. Cook shallots 3-4 minutes, or until browned. Add green beans to pan and saute just until warmed. Serve immediately.
