| Ingredients: |
- 2 teaspoons pure maple syrup
- 3/4 teaspoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 tablespoons olive oil
- salt and pepper, to taste
- one small apple, diced
- 1 celery stalk, diced
- 1/4 cup thinly sliced red onion
- 1/2 large bulb of fennel, sliced into small match-sticks
- 1 cup mixed baby salad greens
- 2 tablespoons pomegranate seeds (optional)
- 2 tablespoons crumbled blue cheese (optional)
- 1/4 cup toasted walnuts or pecans (optional)

| Procedure: |
1. In a large bowl, whisk together maple syrup, mustard, vinegar and salt and pepper. Slowly add the olive oil while whisking.
2. Add apples, fennel, celery and red onion to the vinaigrette and toss to coat.
3. Divide the mixed greens between two large bowls. Cover with the apple and fennel mixture. Add the pomegranate seeds, cheese and nuts, if using. |
