The poke craze has reached Fredericksburg.

Poke Sushi Bowl opened in Central Park at 1625 Carl D. Silver Parkway, the former home of Choi’s Korean Kitchen, last week.

The eatery serves bowls with a combination of chopped raw fish, rice, sauces, vegetables and other ad-ons in a fast-casual setting.

Poke started out as a traditional raw fish salad from Hawaii. The bowls, which expands the salad to include rice and other toppings, are being hailed as the next big food trend.

Poke Sushi Bowl owner Tiffany Cheng also runs Miso Asian Grill and Sushi Bar in Fredericksburg. Cheng’s family opened the first Poke Sushi Bowl in Charlottesville and she said Fredericksburg was an obvious next market, since the restaurant scene here already has many Japanese dining locations.

“We already know fish,” she said. “And customers in Fredericksburg already like sushi. Now they can try different fish and combinations to expand what they know about sushi.”
